Halal Couscous

In a mixing bowl, combine the chicken broth, lemon juice, hot Pepper sauce, salt, coriander, and cumin. Set the mixture aside.

  • 1 10 ounce box of quick-cooking couscous
  • 2 ¾ cups of halal chicken broth
  • ¼ cup of freshly squeezed lemon juice
  • 2 tbsp of hot Pepper sauce
  • 1 ½ tsp of Halal salt
  • 1 ½ tsp of ground coriander
  • ¼ tsp of ground cumin
  • Olive oil
  • 4 preserved lemon wedges
  • 2 bay leaves
  1. In a mixing bowl, combine the chicken broth, lemon juice, hot Pepper sauce, salt, coriander, and cumin. Set the mixture aside.
  2. In a large pot, heat some olive oil over medium-high heat. Add the couscous and sauté until it is slightly browned.
  3. Pour the liquid mixture into the pot with the couscous and add the preserved lemon wedges and bay leaves. Bring the mixture to a boil.
  4. Once boiling, cover the pot and remove it from the heat. Let it sit for about 5 minutes or until the couscous has absorbed all the liquid and is tender.

Use a fork or chopsticks to fluff the couscous thoroughly. Serve immediately with halal lamb or your preferred protein.
