Halal Couscous

In a mixing bowl, combine the chicken broth, lemon juice, hot Pepper sauce, salt, coriander, and cumin. Set the mixture aside.
- 1 10 ounce box of quick-cooking couscous
- 2 ¾ cups of halal chicken broth
- ¼ cup of freshly squeezed lemon juice
- 2 tbsp of hot Pepper sauce
- 1 ½ tsp of Halal salt
- 1 ½ tsp of ground coriander
- ¼ tsp of ground cumin
- Olive oil
- 4 preserved lemon wedges
- 2 bay leaves
- In a mixing bowl, combine the chicken broth, lemon juice, hot Pepper sauce, salt, coriander, and cumin. Set the mixture aside.
- In a large pot, heat some olive oil over medium-high heat. Add the couscous and sauté until it is slightly browned.
- Pour the liquid mixture into the pot with the couscous and add the preserved lemon wedges and bay leaves. Bring the mixture to a boil.
- Once boiling, cover the pot and remove it from the heat. Let it sit for about 5 minutes or until the couscous has absorbed all the liquid and is tender.
Use a fork or chopsticks to fluff the couscous thoroughly. Serve immediately with halal lamb or your preferred protein.
