Halal Coconut Rice (Nasi Lemak)

6 cups (1450 ml) of halal-certified basmati rice – 7 cups (1680 ml) of halal-certified coconut milk
- 6 cups 1450 ml of halal-certified basmati rice
- 7 cups 1680 ml of halal-certified coconut milk
- Salt to taste
- 1 –2 pandan leaves tied in a knot (optional)
- 2 inches 51 mm of fresh halal-certified ginger root (optional)
- Rinse the rice with water and drain it in a strainer. Set it aside.
- In a pot, pour the halal-certified coconut milk and add salt to taste. Mix well.
- Add the rinsed rice, pandan leaves, and ginger root to the pot. Stir it gently.
- Turn on the stove to medium heat and let the mixture simmer until the coconut milk has evaporated, stirring occasionally to prevent the rice from sticking to the pot.
- Once the coconut milk has evaporated, lower the heat, cover the pot with a lid, and let the rice cook for another 15-20 minutes, or until the rice is fully cooked.
- Once the rice is cooked, remove the pot from the stove and let it rest for a few minutes.
- Fluff the rice with a fork and serve hot with your choice of halal-certified side dishes.
