Halal Lentil and Sausage Stew Recipe

This recipe for lentil and sausage stew is a delicious Halal version of a classic dish. It is perfect for any meal and is easy to prepare. Here is how to make it
- 250 grams brown lentils
- 1 carrot
- 2-3 potatoes
- 1 onion
- 2 pairs of halal sausages
- 1 large piece of halal beef belly
- 2 cloves of garlic
- 1 litre of water for the lentils (needed for the sauce; don’t use more)
- 40 g butter
- 40 g flour
- ½ litre water
- 1 tablespoon tomato paste
- 2 tablespoons apple cider vinegar
- 1 teaspoon honey
- about 1 teaspoon salt
- pepper
- one or more bay (laurel leaves)
- Wash the lentils in a sieve and cook them on small heat in one litre of water for 40 to 50 minutes (there are already done lentils to buy, and dry lentils, etc. so best check instructions on the lentils package).
- Twenty minutes before the end of that time frame, add the diced carrot and onion, peeled raw potatoes, garlic, halal beef sausages (full or in pieces), the bay (laurel) leaves, and the beef belly.
- After those 20 minutes, put the pot on the side and keep it warm.
- In a separate small pot, melt the butter and add the flour, stirring until browned.
- Slowly add the half litre of water in small portions and let it boil up once.
- Add the tomato paste, apple cider vinegar, honey, and salt and Pepper to your liking.
- Pour the roux mixture into the pot with the lentils and mix well.
- Keep the pot warm.
- Before eating, pick out the bay (laurel) leaves.
This stew tastes even better the next day and can be reheated easily.
You can add other vegetables, such as celery or bell Peppers, to the stew.
Use any type of halal sausage that you prefer.
You can also use halal chicken or beef instead of beef belly.
If you don’t have apple cider vinegar, you can use white vinegar or lemon juice instead.
Adjust the amount of honey, salt, and Pepper according to your taste.
